Sorry, got behind on these. Thought I'd play some quick catch-up.
Like Robotnik said, story first and foremost. I also like well crafted environments that I can get lost in as well, ex. Skyrim, Fallout, GTA San Andreas and IV, etc. but story is always first for me. Examples of stuff I find engaging; FFVI, The World Ends with You, Chrono Cross, Mass Effect (3 non-withstanding).
I'm really fine with everything as it is, since I'm not much of a graphics whore, but if I really had to pick one I would nominate the PS1 era. Those games just have not held up well (graphically, not gameplay) in my eyes, as opposed to wonderful 2D sprites of the 16-bit era etc. Sure, I'd like full on remakes of some old games (who wouldn't) but that isn't the question.

Seriously, another Dark Cloud would be fantastic, or another proper Actraiser (2 is a stinker if you ask me). Why? Both of those games were RPGs with Simulation aspects, and with todays consoles and our upcoming next gen systems, I think some truly amazing game worlds could be created with these licenses.

What are your views on E-sports? Do you follow any particular game, if so what games do you follow?
I personally follow the Starcraft 2 scene quite a bit, only recently started but I cant seem to get enough action haha some of the matchup's are pretty ridiculous and seeing the Koreans crush everyone is pretty amusing to say the least.

I'm not a fan of them. I will honestly say I've never given it much of a chance either, but it's just not something that appeals to me. Something that really puts the damper on my opinion of E-Sports are general attitudes of the MLG sponsored people. I've played with and against enough of them on the likes of CoD and Halo, and I'm pretty confident in saying that 98% are complete assholes. Obviously, that's not to say that they are all like that, but it definitely sours me on the whole thing.

I've watched a few fighting tournaments here and there but that's about it for me.
I don't follow a particular game but I do find myself watching speedruns or friendly "pro" matches. Usually I see this stuff by randomly seeing channels on the front page of broadcast sites such as justin.tv or twitch.tv (though now the 2 kind of merged). I don't watch anything to do with League of Legends; no real reason why.
Last speedrun I saw was I think Super Mario 64,the one with the sine sprites and canvas painting levels. The last pro match I saw was I guess some party hang-out thing while players played P4 Arena. I suppose the only reason why I watch these is because it's live.
I don't really play any of these games but I kinda enjoy just watching. I can't get into pro fps tournaments or matches; I simply don't care for them. It only makes it more annoying when I see said tournaments representing their nation just to see the loser get bashed and stereotyped.

In any case, when I had the time I always tuned in to some Day9 or Tasteless + Artosis at the GSL. I'm not even into SC2 that much and they still entertained the hell out of me. They're just that good.
Not a big fan of watching Starcraft or Halo being played but last year I caught the EVO Marvel vs Capcom 3 Finals and got a real kick out of it. Which is weird because I'm not a big fighting game fan, I used to play them when I was younger but not anymore.
