If you're ever worried about what is going into your food, educate yourself about it. If you're worried about what antibiotics/hormones are being fed to the animals that you eat, purchase locally whenever you can. If you are still concerned after seeing the local animals, find out as much as you can about the farms themselves. Most local farms raise their animals without the use of hormones or antibiotics, and most local butcher's shops don't have the capacity to heavily process their products.

    I cannot abide that taste.

    That sounds weird to me.
It may not be the most appetizing looking portion of the animal, but what we consider the prime cuts nowadays are pretty much never the tastiest cuts, with the exception of ribeye. T-bones (striploin/tenderloin), sirloin butts (top sirloin/bottom sirloin/tenderloin butt/cap steaks) are all fairly lean cuts, and therefore you don't get the digestive benefits from the fat, and they are all fairly tasteless. Most people in the older generation (think 70+) still buy the "tougher" cuts (pretty much anything from the shoulder, hip roasts if you are doing oven roasts, etc), because they have so much more flavour and taste amazing if you know how to cook them.

That being said, pretty much everything that we eat on a daily basis is determined by what we were raised eating. I was raised on game meat (deer, moose, elk, etc) and chicken. We rarely ate beef 'cept for burgers, and we rarely ate pork 'cept for the occasional chop. I personally don't buy many bone-in products at all, even knowing that they taste better and are healthier for me (outside of a fat content aspect), but I don't enjoy cooking them and I don't enjoy eating them. I still purchase a lot of processed frozen foods, but that's more from a "lack of energy" aspect. I would never eat liver, even knowing how nutritious it is for you and how many benefits you get from it, merely because the texture throws me off. Same for sweetbreads and pretty much all offals.

In that regard, it all comes down to personal preference and what you consider acceptable. I'm sure there are people over in other countries that think it's crazy that we as a culture are disgusted by the idea of eating the marrow, but have no qualms about eating something that has been run through so many mechanical processes before it hits our plates and is essentially tasteless by the time it gets there.

Yeah liver is tricky, if it's cooked right and with onions I can stomach it though. I do it every once in awhile for my health.

I was raised in the prairies. Lots of good hunting out there.

I think I have some moose grinds in my freezer as well... I should really get on cleaning that out.

I have to admit though, I'm not a huge fan of moose grinds unless I cut it with at least 20% pork grinds.

That's what throws me off. Most of the times I go out drinking, Jaeger shots always seem to come up. I hate doing them.

Buffalo burgers are very good. Makes me wish there was a reliable place around here that sold it.

Moose is something I've never had, and I've eaten so many different things.

It took me aback the first time I tried it but then I slammed the next 3 shots and knew I was in love.
