    Well, since "Halloween" stands for "All Hallows Even," I would assume that somewhere along the line it got shortened to "Hallows Even," which was then shortened to "Halloween." Since it's two words, combined as one and missing a letter, our good friend apostrophe steps in to do his duty when combining two words into a contraction.
