    We cut up some inside rounds for jerky on Friday, spiced them and let them sit over the weekend, then ran them through the smokehouse today. We each got to take home a portion of it.

    It's much more satisfying when you make it yourself, I must say.

    Venison can be good, depending. It's very lean, however, so it's really easy to overcook.

    That reminds me of a story my friend told me that his teachers in culinary school told him about someone that didn't make their salami properly, and almost died because the sodium nitrate had begun to suck all of the liquid out of their brain.

    Yeah, you have to be really careful with the nitrite levels in smoked products. They can be very poisonous in high volumes.
