Culinary ambassador: Au Pied de Cochon's chef-owner, Martin Picard, made big news last year when his no-holds-barred cookbook had everyone talking. And his fame carries on as the only Canadian chef featured in the book My Last Supper, in which 50 of the world's top chefs were asked to describe their final fantasy meal (Picard chose copious amounts of caviar, bluefin tuna and snipes he hunted himself). And then there was the documentary Durs a cuire, which profiled this king of excess hunting, cooking, travelling and imbibing enough Champagne to impress even Grand Prix revellers. And if that weren't enough, he debuted an hour-long cooking show on Radio-Canada last week. Called Martin sur la route, the show features Picard and friends hunting beaver, fishing for salmon, trapping lobster, butchering a moose and cooking up every last bit from shanks to testicles. This year Picard works his English when his cooking show, in a half-hour format (with the blood, guts and beaver hunting edited out), debuts on Food Network. So now all of Canada can enjoy the enfant terrible of the Quebec cooking scene. Now there's something worth applauding!
