Random Vita impressions from my few days with it so far:

Ys Memories of Celceta: Holy shit this game is fun.
Soul Sacrifice: Oops, haven't played it yet
Muramasa Rebirth: Amazing. Much better than the Wii version.
Gravity Rush: Interesting, but a little too much "we need to shove in as many Vita-specific features as possible"
Street Fighter x Tekken: Still shit, but impressive to see on a handheld at any rate.
Don't Starve: Fun, but holy shit everything is SO TINY AGGGH MY EYES
Terraria: Works super well on Vita
TxK: It's basically Tempest 2000. That's a good thing.
Pix the Cat: AGAIN, WHY IS EVERYTHING SO SMALL MY EYES CAN'T TAKE IT, also Chu Chu Rocket on crack.
Pinball Arcade: It's pinball. And it's awesome. FUCKING TWILIGHT ZONE TABLE WHY ARE YOU THE BANE OF MY EXISTENCE
Velocity 2X: This game has no right being as amazing as it is. Possible GOTY contender.
Spelunky: It's portable Spelunky, what more do you want

Also, got Senran Kagura: Shinovi Versus coming next week (slow shipping agh), so definitely looking forward to that for the, um...gameplay...yeah, that's it.
