You could attempt this engine hacking that I halfheartedly attempted a couple days ago.

I have a rough idea of how scripts are handled and I may have found a toolset that's useable provided I don't mind rewriting it extensively.

But when you're talking about 4 games, that's a lot of rewriting.

And then there's the formatting. Which I haven't begun to think about because TIRED.

Yes, I want my first project to be one that makes me go, "... what the fuck am I even doing?!"

There is a really nice editor recently released for the NES game Monster Party. It's very full featured, allowing you to change many aspects of the game.

There's just so many games to choose from. I've been wanting to do an all desert worlds romhack of SMB2. Hacking SMB3 was always of interest too, especially since a new editor just came out recently. Decisions, decisions, better to just finish projects that Ive already started, rather than start a new one.
