Looking at what the old 3GS iPhones still go for I'm thinking I can buy an iPhone 4, get my use out of it, sell it and still get two or three hundred quid back after 12 months. By which point there'll hopefully be a 64GB iPhone available and I can sell the Touch as well.

You can text and call on the iTouch as well, but it requires wifi. TextFree with Voice, bro. Of course, the calling only works on the 4th gen, since the earlier ones don't have a microphone.
