It could be different depending on countries, but everything that I have ever heard refers to:
Anything from lamb: called a chop (loin chop, shoulder blade chop, shoulder arm chop, rib chop, etc)
Anything from beef: called a steak (outside round steak, top sirloin steak, rib eye steak, etc)
Anything from the loin section of pork: called a chop (rib chop, center chop, sirloin chop)
Anything from anywhere else from pork: called a steak (shoulder blade steaks, leg inside steaks, leg outside steaks, etc)
Admittedly, this is by Canadian standards, but I'm fairly certain that it's pretty much the same in the US, too. Not sure about Mexico or... wherever the fuck Kouen is from. Somewhere in Europe, that's all I know.
It also helps cut down on certain amounts of confusion sometimes. When someone comes into my shop with a grocery list for someone other than themselves, and all that person put down was "pork steaks," it helps narrow down what they are looking for. Usually if someone asks me for "pork steaks," I usually direct them to shoulder blade steaks. I haven't had any complaints about that so far. If they are looking for "pork chops," I should them the different chop selections.

I feel like getting a taste of it, but here in my state, a tradition (a bit expensive too) it's goat meat, or as we call it, cabrito.Lamb isn't overly common where I live, but probably still more common than in Mexico. I have the least amount of experience with lamb, and I don't like cutting it too much; very little margin of error. If you fuck up a cut, it's very hard to save it.Tastes great, but it takes a sweet time to get digested.
