I've also dissected a squid, frog, pig, earthworm, grasshopper, spider, mud puppy, shark, rat, cat, a sheep's heart and a cow eye.

I think that's everything, but I feel like I'm missing something. I'm also improving my rat killing technique every couple of weeks, and learning how to keep acutely ill people alive two days per week. This might come in handy for torture, perhaps?
