Well just keep guarding and hit them when it's safe. There's not much more to it really. You have unlocked the skill that shows enemies in different colours depending on what they do, right? That helps a lot knowing when to guard.
I'm following the trophy guide, and watching a video guide here this guy's pulling off all kinds of moves I don't have.
