The game is pretty much the same either way, the only difference is the ending and giving it to ugly serpent 2 unlocks an extra group to join.

Pick whichever one you want, then do the other on NG+. That way you'll get all the content and trophies.

Already joined that covenant. I'm only missing the covenant in the Great Hollow (and the sunbros, but I don't think I can do that yet). I'll go with the ugly serpents after dealing with the hydra and whatever else is there.

Sun Covenant is one of the earliest ones you can join. The join location is in one of the first areas and the only requirement is doing a bit of multiplayer.
