As most of you know, there hasn't been anything on a N64DD emulator yet. I was wondering if there's a place I can find more info on the probabilities and possibilities of this.
Hmm, looked around a little, and this site seems the best/most updated N64DD news site. They should have the info you're looking for if anything.

There are not enough games released for it for someone to want to emulate it.

F-Zero X Expansion Kit only adds some tracks and a track and car editor to F-Zero X. The tracks can be played using these patches, the in game level editor has a windows version(?) available here.
The only worthwhile game left IMO is SimCity 64. There are plenty of other SimCitys released on other platforms to make up for that, I guess.

I know there are like 9 games, but what are thew chances you can get a actual copy of those, plus I feel like since there are only Nine games, if someone can build a basic structure, a great emulator is quite possible.
Just out of curiosity, what is a N64DD?
