I could be wrong but here's my understanding of it:
PS3 = Faster CPU. 256MB of RAM and another 256MB dedicated to graphics.
360 = Slower CPU. 512MB shared memory which gets split between graphics and main system as needed, ala integrated graphics on a laptop.
Most of Bethesda's games eat system RAM for breakfast and 256MB just isn't enough to handle a game like Skyrim that keeps track of dead bodies or remembers exactly where you threw a cup on the floor in a house halfway across the map. That's why the save file balloons and the game slows to a crawl as you play it. Short of designing their games with the PS3's architecture in mind (which they won't because 360 and PC comprise the majority of their market share and in comparison are much simpler to port between) there's only so much they can do to fix it. The fact PS3 Skyrim works as well as it does now is a minor miracle.
The BlenderFoundation is making another one. Called Tears of Steel or something. So that goes along with Elephant's Dream, Big Buck Bunny and Sintel made by them. They also made that YoFrankie! game. There is that movie Rosa (i believe that is the name) that some other people made, and other's but not of the quality of those.
Yeah I have it on PS3 myself. I didn't have any major issues with it but I know for a lot of people it was a total bugfest. It's supposedly much, much better now they've patched it. I know in my case it takes a bit longer to load but the framerate is way more stable and it doesn't chug anymore.
