Robot Spaghetti
Technically one of the most well designed fighting games. Aesthetically the most boring thing ever. The game has almost no following outside of Japan.

If it had more flare (some flashing lights always work, look at DBZ ) with the technical design, we'd all be buying the game right off the shelves.
