Also, it varies heavily from field to field.

Some actually prefer to hire people who have experience over education. Usually because it's easier to instruct someone on site than to take someone who has a head full of theory but little in the way of practical knowledge and turn them into a functioning employee.

In other cases, it's a highly intellectual field and you usually need to know a shitload of stuff. In those cases, a degree is required for entry period.

In tech related stuff, quite often. Just because there's so many people out there with experience (and just as many with 'experience' that can't be verified) and that piece of paper is as good an indicator as any.

Connections matter more, but for applications where you don't personally know the guys involved the qualifications matter a lot.

That'll depend on exactly what you want to do in the field. Its almost a necessity for some IT jobs, not particularly relevant to others.
