I just replaced the 1500uF 16v capacitor that popped with a 2200uF 16v capacitor from one of my old PC motherboards I had lying around. It turned on fine, no pop this time. I assume all is well.

Still hesitant to do this on my actual working 360 though.

Not from my understanding, but I know so little about caps just yet. It was to my understanding, that you had to match the microFarads exactly, and the voltage could be at or higher.
But whatever if it works.
