Soldier is probably the easiest. It has access to all the weapons and has a slow-mo/bullet time ability. I personally loved playing as an Engineer, though. You can summon a cute combat drone and set people on fire! Or freeze them and watch as they fall over helplessly. What's not to like?

Yeah, you should be fine. It only gets really tough on higher difficulties.

If you're playing on casual, adept, soldier, sentinel probably in terms of hard->easy.

Insanity, infiltrator/sentinel->adept->soldier probably.

Play an Adept then. AKA Jedi Knight without the lightsaber, Force Pushing people all over the place.

Although from what I hear it's a bit more difficult to play than other classes.

Adept was my first playthrough, and normal wasn't too bad really.

I then played sentinal, soldier, and infiltrator.

Of all of them, the Infiltrator had the worst time.

Soldier would be my pick if i was going to do an insanity run though.

Speaking of ME2, I just beat Lair of the Shadow Broker, Overlord and the Kasumi mission. The latter was disappointing, the other two were pretty cool. Overlord's ending was actually pretty damn disturbing.

They seriously need to make these things a bit longer, though. I like my ME2 when it's not in super short, bite-sized bits.

I didn't really like kasumi either, but it was because it was insanely easy, and a bit shorter in comparison.

They're very good. I believe the official 'flavor' is passion fruit. Rest assured they don't taste like Red Bull or Rockstar.
