Unplug the HDMI cord. Hook up the AV as you would, then when you turn the system on hold the power button until it beeps. Then you will get a message about keeping it displayed in the current mode, choose yes.

You can do it through the menu too, but I find this is easier as you don't have to plug multiple cords in and out and turn tvs on and off.

I know you've already found a solution but out of curiosity, you're saying it just loses the video connection randomly right? I have the exact same problem for time to time, and what I've discovered is that cleaning dust off of the plug and out of the port on the PS3 fixes this issue. Maybe something to try, since AV isn't nearly as high quality (assuming you mean the yellow/red/white plug type connection).
"I think that the problem with this video is it is highly derivative of many popular bands within the genre. Although when viewed on its own merits, it does have a deeper groove. However what it has in groove, it lacks in originality. One can't help but be reminded of such bands as Pearl Jam, White Zombie, Suicidal Tendencies and other bands that bear the mantle of so called "Alternative Rock". One is even reminded of Lorie Anderson when she wore curlers. Hehehmhm! This video speaks less to the heart and more to the sphincter. In closing, I think Korn would do well to learn more from -"
