I remember I read the Lost Years of Merlin once a long while back and it always left a good impression. However, I never did get around to reading the rest in the series. A Wrinkle in Time was also a fond favorite of mine but that may be more science fiction to you.
The Magic Kingdom of Landover series (six in all) by Terry Brooks. I read the first (Magic Kingdom For Sale/Sold!) back in 1987 and found myself deeply engrossed and the book difficult to put down. Great storyline and characters. Some funny wisecracks too. The final book in the series (A Princess of Landover) was released in 2009 - I was sad to see the series end lol. Great fantasy novels imho.
A discovery of witches by deborah harkness if you like modern style witch and vampire fantasies.
The hunger Games if you enjoy medieval types of fantasy.
the Historian if you enjoy history and vampires (even though it's more about the past of Vlad "The Impaler" Dracul.
Not entirely sure if it strictly counts as fantasy as it's in a modern setting (but with magic), but I saw The Dresden Files (awesome) already mentioned so I figured I'd also mention Charles Stross' Laundry Files series, starting with The Atrocity Archives. It's a "Lovecraftian spy thriller" where "horror elements such as the Nazis using higher mathematics to open "gates" to other dimensions are combined with humorous elements satirizing bureaucracy".
I recommend reading The Spook's Apprentice...

I would suggest the Hobbit and Lord of the Rings trilogy. I normally don't read fantasy books but I was engrossed and unable to stop reading. I can't wait for the Hobbit movie to come out in December.
