i believe that you can cut and paste your memory card files from your memcard folder into a different folder and leave it blank and the emulator will create new ones... that is a theory i have never tried it i will try now for you and let you know

EDIT!!: just tried my theory and it works what you have to do is cut and paste your memory cards into a new folder outside of EPSXE and then run a game you wish to save and 2 new memory cards will be created for you hope this helps

    open ePSXe.exe.
    Go into config menu.
    go to Memory cards.
where it says "memcards\epsxe000.mcr" change the epsxe000 to something else like epsxe002. this will create a new .mcr file which ePSXe will use just like a new blank memory card.

you can then use File menu > Run BIOS to get the playstation memory card manager to switch around saves from one memory card to another.

    Be afraid. Be very afraid.

Either that,or you could use this.

    It's a memory card manager.
You can import/export saves, and it is possible to use Gamefaqs saves too.
