I'm still on 3.41 so I can't really say much on how installing CFW works.

If it helps, I haven't put my PS3 online since Metal Gear Solid 4 was newly released.

Out of curiosity, if I were to borrow a newish game (Dynasty Warriors 7) and play it, would it force update my PS3?

It asks you to update, you have to if you want to play it which makes it the same difference.
