Well first of all could you tell what kind of error do you get when the game crashes?
If you're using ePSXe 1.6.0 try using older one like 1.5.2.
For SPU plugin Eternal SPU is recomended cause it provides
special game fixes for this game.

You cannot...this plugin lets you run ISOS as CD's. (something like mounting with Daemon tools and running them as CD's in emulatorOriginally Posted by Metal Sam Gamgi
