zDoom sounds like it would be a better bet. I didn't like the "new" sprites in jDoom, but I liked being able to use a mouse for pretty much the same reasons you want to. If zDoom does that without changing anything else, then get your ass on it, man!

I tried Doom 32X on the Xbox the other week.

You can play mouse+KB and it's smooth as hell. Besides there are kick-ass WADs specifically for that port.
