Aliens, man. A galaxy spanning empire wouldn't need to worry about exploiting habitable planets. They'd have plenty of dead or less habitable ones to exploit.
If they need metals they have nearly unlimited asteroids to mine. We have nothing to offer them that they don't have an overabundance of, aside from genetic material they can use for experiments but most likely they create synthetic life and it's irrelevant. The UFOs themselves would be piloted by AI and could be projecting holograms of entities that we can feel, and it doesn't need anything material.

Also, in Star Wars films the Galactic Empire corresponds to a Type III Kardashev civilization, if they take over living planets it is among themselves for logistical reasons not for resources. And most can identify with the human characters that have a stake in such affairs, however we correspond to the Type 0 Ewoks of Endor and are relatively insignificant to rest of the galaxy's inhabitants.
We've discovered all manner of exoplanets and there is no Roman God of Cock(Priapus) or Roman God of Shit(Sterculius) yet.
Type 1 is Flash Gordon, Type 2 is Star Trek Federation of Planets. Type 1 has fully harnessed the power of its home planet, Type 2 has harnessed more than one star system. Type 3 is galactic and has harnessed a galaxy.
Also, we recently found tunnels at the edge of our star system that lead to the nearest star system, Proxima Centauri. There is a habitable super Earth there called Proxima Centauri b, and if it has life that system is older and life would have had a head start on our planet by several millions of years. We received a radio signal from there in 2019 but it's inconclusive if it's a technosignature. What I can deduce is it is inhabited by a civilization they are much more advanced than us of they haven't self-destructed. It's feasible for them to have travelled here using solar sails or von Neumann probes, the latter would be nearly impossible to detect. Unless they are us and travelled here to colonize by redirecting the asteroid to kill off the dinosaurs to make it safe then hybridized their animals with ours and with apes to adapt to Earth, could have happened. In any case, that's just speculative but it's a thought.
that's interesting. if the civilization is older then there is a possibility they came here that would also fit with the speculation that life on earth was an experiment. wouldn't the use of solar sails be relatively slow(faster than a solid fuel shuttle)and take decades to a near century to travel that distance?
Rudimentary solar sails can reach Proxima Centauri within 10000 years(laser-powered solar sails in 42 years), the thing is that their payload can be solar powered robots that are dormant until they arrive. Additional payload can be genetic material to seed a planet with life from one planet to another. As is the case, replicating nanomachines like von Neumann probes mimic cells and DNA designed to evolve, they'd be highly complex machines by the time they arrive here. UFOs?
