Probably because it's real mint. I have the same problem with watermelons.

The first time we made homemade mint chocolate chip ice cream, we didn't have the food coloring.
Still tasted good though.

the place i was at today is pretty good about returns of games/consoles I've bought games and console from them before they give a 3 or 4 day warranty on that stuff so if i don't work or stops working in that time you can return it I've never had a problem with anything I've bought from them not working or breaking.
