The only SMT game I ever played was on the DS and it wasn't nearly this hard so I may be out of the loop, but how should I go about getting stronger?

Also the Gamestop is usually pretty good about the games they accept for pre owned and whatnot, but I got FFX and it's laughably bad. I'm off to take it back and get a different copy.

No, that was clearly Fer. I don't grind in these games. I simply use strategy to get through. Grinding doesn't help your situation at all. Unless you avoid every random battle intentionally, in which case, you clearly messed up somewhere.
You don't really get stronger, you just find a way to use the system to your advantage. Strategy, enemy weaknesses, good personas. It solves everything.
Also, to be fair, I grinded not because of the enemies, but to max the level of my Personas and have them get all their skills to have better fused stuff at the Velvet Room. :P I was obsessed with having insanely powerful Personas. :lol

The persona system still confuses me and I tried reading a guide and that only made it worse. All I know is Skewer is the bane of me.
This damn Knight OHKOs mewith that shit and I can't counter it.
Considering I've fought everything I came across I assume my personas are ass.
Buffs are helpful, try to keep only one of your teammates to heal/buff and the rest to attack, it's a tricky battle, and to be honest, it's one of the hardest battles in the whole game IMO, after that the game doesn't get easy as cake, but they're manageable, this one can get you wiped out real quick. :lol
