Well, I don't want to count my chickens before they're hatched, but I was able to save the game using a clean new memory card (not created by duplicating and formatting an old one). Let's hope that's the end of this issue (crossing fingers). Thanks to all.

Yeah, kinda. It seems like there's some issues with the savestates in this game. I mean, apparently if you load the game from a savestate, the in-game saving is wiped out, and you can't save again in the same spot of the memory card. So I'm trying to only load the game from the in-game save function.

Don't use save states they are unstable to start with but if you load a save state that you created before you changed the memcard it will just revert to the previous state it was in before you changed the memcard anyway
Save states don't just save the games state but also the emulators state including memcards and any saves if they had not been there at the time the save state was made
Save States are an unstable way to save and can crash a game if loaded back in at times so best not to rely on them, that goes for all emulators by the way, while you may of used save states without issue in the past this may of just been pure luck as it can happen any time, to minimize this though stick to using save states while in pause mode or even in a static menu
