I'm Italian, not Asian so we're on a similar point. Killing the last dragon is because of his country being stupidly insane. The whole nation is taught that they are superior and have divine right to rule the world, so they all train to fight in the war or support the war with food/metallurgy/ect. Killing a dragon (which is pretty much their nation's own best elemental partner... from whom they learned pyrokinetics) was considered a great honor. Killing the last dragon is something Iroh regrets now that he's no longer trapped by his own Lawful Evil mindset. Did I mention that his own grandfather sparked the whole war and that he was going to be the ruler of his country until his son died in the war with a heavily defended capital that he himself oversaw?
By the way, these dragons were kind of a mix of Western body, Easter head, and Eastern(?) mind. With magical fire powers.
