Each one has their merits. Let's see...
"Classic" CV: Bloodlines;
3D CV: Curse of Darkness;
Best story: CV64/Legacy of Darkness;
Best Metroidvania: Symphony of the Night (the only flaw is the utter lack of challenge, aside from that everything is pretty much excellent.)
Circle of the Moon gets a honourable mention for being properly tough and having an exceptional magic system.
Sorrow duology gets a mention, because it's popular. I'm not a fan of it, though.

Classic I'd say Super Castlevania IV. 3D Curse of Darkness. Metroidvania my favorite is Harmony of Dissonance hands down.
I love Castlevania III, Dracula's Curse, NES.
Although Dawn of Sorrow has more features and graphics I like Castlevania Aria of Sorrow...Especially for the story line and the fabulous music soundtracks of the game...Even now I play this game now and then...
Did I mention Syfa can freeze the water (for almost 2-3 seconds!) in Castlevania III? It's pretty cool!!!
Hands down without a doubt Symphony Of The Night is the best :D
Hard to decide. SOTN is really good. But I also like NES Castlevania 1 for difficulty and Super Castlevania IV is pretty good too.
Perhaps I should also point out that Syfa can kill the serpent boss in one single attack, using them fancy orb-thingies. It's quite radical, you guys.

I've played a handful of the Castlevania games. I'd have to say Super Castlevania IV is one of the best. The gameplay, the special effects. Not to mention that badass soundtrack. It really gets you pumped, especially in the first level.
Simon's Quest.
People always laugh when I say that in a chat or a forum, but I never understood the hate it received. I played it that Xmas it came out and had no problem beating it within a week. The puzzles weren't that hard. Plus it has the best tunes of the series, was the first to have rpg features, and had multiple endings, which was a rarity for games at the time.
