RPG: "Neverwinter Night" I love that game, and "Dungeon Siege"
Adventure games: "Syberia" 1 and 2, and "The Longest Journey" (point and click), and another adventure game I really liked "Beyond Good and Evil"
Horror: Silent Hill 3 (the only one I've play )

See if you can get your hands on Outcast... best TPS I've ever played (if you like those). With a good storyline.
Pkt already mentioned Psychonauts, but I'll recommend it too. It's simply hilarious, I personally loved it.
Oh, and listen to Borman, Fahrenheit is a true masterpiece, indeed. Movie-like adventure game, quite a unique experience if you ask me. I haven't seen any other game like this.
Fallout and Planescape:Torment aren't really console-style RPGs, but they are the best you can find on the PC.
You could also take a look at Arx Fatalis, but I don't guarantee you'll like it. It's like Wizardry or Ultima Underworld. But if you want a hard, challenging but really awesome game, get this.

Morrowind, Kotor I & II and any Sega PC game [Mostly DC ports].
Play planescape torment/baldurs gate if you're a D&D fanatic, or whatever the polite thing is to call them.

The Baldur's Gate/Neverwinter Nights/KotOR line of games pay much more attention to D&D stat machination than Planescape (or Fallout, for that matter).
But if you'd really want to play a huge game, you could try Wizardry 7 or 8. With 300 hours of pure game time, it's easily one of the longest games I know of.
Stat engines are pretty much the same, the games are way diffrent. It feels better playing a real video game instead of some point 'n click board game.
