They're converting the digital output to analogue to get composite... why?

Because the data on the digital bus was designed to be run through a DAC. Even though it is digital, it is "composite video" because along with the luma data, the bus also contains the properly timed blanking, color burst signal, phased-color burst and sync signals to be compatible with an NTSC television.
One of the features they emphasize is "No FPGA’s, no bulky or cumbersome hardware" which would be required to convert the DS Lite's digital output to a TV-compatible digital format. While they do use a dedicated DAC and buffer, the pins could be directly hooked up to a television with nothing more than a matrix of properly weighted resistors.
In fact, after saying it could be run through an resistor DAC, I found that the prototype is exactly that.

Ordered a GDEMU v5.15b a couple of weeks ago. Package arrived last week, but the board was v5.15 (so 2 months earlier build with plastic SD slot).
Contacted seller and told them they sent an older version by mistake.
They didn't want it returned and offered me 50% refund.
Put in a return ticket, they offered me 50% again.
I asked for 80% refund.
Waited 2 days and now the 80% is coming back
I already have a mount kit and SD card extension cable for it.
