I don't have a preference, but I'm looking forward to watching this. I haven't played FF7 before, so I want to see it.

First of all, I think you're insane for attempting this since quite a few of those games will be 40+hour commitments.
Second, if you're going for everything you can record without a capture card, you're missing out on all the side-series games! Like Final Fantasy: Mystic Quest for the SNES! Or FFT for the PSX! Or FF Legend for the GB (start of the SaGa series)! Or FF Adventure, also for the GB (Start of the Mana series).

Finally, on which version to play... always the DS or GBA version when it's available. They're generally about the same quality or better than the PSX versions, but they don't have the long load times that being a disc-based system requires. Say what you will about emulators negating that, but there are still load screens. That said, try taking a short video of it first to make sure it looks alright. I'm not entirely sure what resolution any of the handhelds output at, but it'd be pretty bad if the picture looked terrible when stretched to default Youtube window size.

Oh, I know it's insane, And how will I be missing out? I never meant to record spinoffs, only these main series games. Also, I actually own a copy of FFA for the GB. Never beaten it tho.

There's also a really neat hack for FFIX if you're interested in that. I only say that because we've all know how easy the PSX FF games are and they make them more enjoyable without the changing anything story wise.
