So when I go to download a rom, there is multiple files to download. Do I download them all? If so which file do I open in Pcsx2?
I looked in the FAQ, but I couldn't seem to find what I was looking for.

I have 7Zip, but I have no "combine files" option.

Don't know what you mean by that (not a computer wiz). For instance, I have downloaded Yakuza for PCSX2 and I have 6 files. I can play the game by just opening the first part, so I don't understand why I need the other 5 parts.

What letters/numbers are after the "." in the file name? Like: "picture.jpg" or "application.exe" et cetera. The ."jpg" and ."exe" are the extensions.
If the file is an HJSplit part file then it's extension would be ".iso.001" and then there would be ".iso.002" and ".iso.003".

Right-click->7zip->Extract Files/Extract Here
Older than you think
All files are still needed, 7-zip and winRAR and just about every other archive extracting software will automaticly read all other parts
This is something that started with zip files back in the olde Dos days, usually spanned/split for storage on olde floppy diskettes
