In no particular order:
Star Ocean: The Second Story
Legend of Mana
Legend of Dragoon
Final Fantasy VII
Final Fantasy VIII
I would've put Valkyrie Profile, but I've only played the remake, Lenneth, on the PSP.

Here's my list:
Star Ocean: The Second Story
Final Fantasy VII and IX
The Legend of Dragoon
Persona 2: Innocent Sin
Final Fantasy IV and Chrono Trigger from Final Fantasy Chronicles
Final Fantasy VIII is an on/off thing for me. While I like the characters and the story, I wasn't too fond of the way you get money/magic, upgrade your weapons (I hated searching for the items for the "Ultimate" weapons.), and the Junction System. It took me a while to become familiar with it.

Ahh, Miku! She's so AWESOME!!
FFVII was good, not a favorite, haven't played the other 2, but much more than the main games in the series I loved FF Tactics.
Front Mission series - also tactical RPG's
Xenogears (Disc 1 )
Vagrant Story (yeah, the game can be hard at first, but really easy once you have a weapon for every type and element)
Threads of Fate
Brave Fencer Musashi
Played the PSP remake of Revelations: Persona - good game, but, like FFVII, not a favorite. Currently playing Persona II: Eternal Punishment, so I'll see about that one...
idk i think most of the rpg are quite good ...

vagrant story
star ocean 2

1. Legend of Dragoon
2. Parasite Eve
3. FF9
i've played most of the RPG's for PS1. i gotta say, they are probably some of the best RPG's of all time; from any other console.
now i think it's time for a "best ps2 rpg" thread lol. my nominees are Star Ocean 3, Grandia 3, FFX.
Chrono Cross
Final Fantasy IX
Breath of Fire III
FFVII is overated. Not a bad game mind you, it's just that it's proving to be quite average after all of these years.
I haven't really got to play too many ps1 games, but here are some of my favorites for that system.
Megaman Legends 2. Okay so it isn't an rpg persay, but it has rpg elements. Your basic weapon, the Buster Gun shoots puny blasts until you find buster parts for it. It's performance is seperated into attack(how strong each shot is), energy (how many shots are in a string before a short recharge, Default is 3), Rapid(how long of a pause between each shot in a string), and Range(how far each shot will go before it disintegrates). There is no charge shot so the Buster's performance is entirely based on it's parts. You can't have everything either unless you're playing easy in which case you are given a part called Buster Max. You can also make other weapons using items found in ruins so there is exploration. Special weapons can be further customized to increase stats. The stats can be mostly the same, but there is sometimes also a special stat. Example when using the vacuum arm, the Special stat controls how fast the suction is so you can get Zenny easier. The Megaman Legends series is also heavily story based. The story can take you through intrigue, curiosity(for exploration), thrills, laughter, and even touching sadness. So that is why I have counted it.
Xenogears. I never got to play it fully, but I remember a great story mixed with great gameplay that made battles a blast to fight. Sadly, I was on the second disc when the disc got cracked by my ps2.
Final Fantasy VIII. I played this and VII and I ultimately like this one better. I haven't played IX yet. For some reason I really like it when hard work is rewarded like using the Magic Draw system. It's something that requires work, but it's worth it in the end unlike some games make you spend 4 or five hours in one area because you won't get another chance to go back and battles give you a tenth of the experience from now on until the endgame metagame.
Digimon world 3. I originally bought this game a few years ago when I was into Digimon Tamers. I kind of like it better than Pokemon, at least in the story area. Also the possibilities of the Digimon almost seem endless. Who would of thought Guilmon could Digivolve to Gallantmon, MegaGargomon, and Sakuyamon. In fact All of the digimon have the same opportunities to digivolve to many different digimon outside of their natural lines.
Three more days until Party time!
I agree with Alan Heer: FFVII is overated
I prefer FF IX, because that one united the old and the new. We have cool chibi graphics, a great OST, and the old classes from the firsts FF: Knight, Black Mage & White Mage, Thief... ah... it's so nostalgic *-*
Btw, Megaman Legends is great.
