I'd probably be tempted to go with Shadow of the Colossus, actually. There are games with much better looking models, and more realistic environments. But I just think its overall artistic direction is absolutely unparalleled on the PS2. The environments in the game are so amazingly designed, and really feel alive, despite the abject lack of life on the whole island. And the Colossi feel organic and natural to me in a way that very few game bosses do. I don't think its graphics are the best, in a traditional sense, but it wowed me more visually than anything else on the console. By a long, long way.

Failing that, FFXII looks absolutely exceptional, even if I'm not so fond of the character designs.
